An experiment in cool Pinot fermentation. Perfumed, layered, and powerfully delicate.

Let's Get Technical

Hand harvested in the early morning, the clusters were then destemmed, with select stems layered back into the open top fermenters. Fermented with native and isolated Budgundy yeasts and punched down by hand once daily, with the maximum fermentation temperature not exceeding 77F. Drained and pressed at dryness and elevaged for 11 months in neutral and one new Burgundian French oak barrel.
